DIY: Iced Pumpkin Cookies

Happy Thanksgiving! In honor of the holiday, it is only right that I post about food. It has become a family tradition for my husband and me to make iced pumpkin cookies each year for the Thanksgiving holiday. We stumbled upon this recipe online one year and it has stuck as a must have dessert. Check it out!


Ingredients:

2 1/2 Cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
2 tsps ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 tsp vanilla extract

Frosting:
2 cups confectioner's sugar
3 tablespoons milk
1 tablespoon melted butter
1 tsp vanilla extract

1. preheat oven to 350 degrees F. Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, salt.
2. in a medium bowl, cream together butter and white sugar. Add pumpkin, egg, and vanilla to butter mixture. Beat until creamy. Mix in dry ingredients.
3. drop on cookie sheet; flatten slightly
4. bake for 15-20 minutes. Cool cookies, then drizzle icing with a fork
5. To make glaze: combine confectioner's sugar, milk, melted butter, tsp vanilla. Add milk as needed to achieve drizzling consistency.





Always have to post a picture of the dogs. They circle the kitchen like sharks whenever anything is being cooked. But don't worry, they will have their own "pumpkin" treat for the holidays. Along with the pumpkin cookies, I have pumpkin bread, pumpkin pie and homemade pumpkin dog treats on the list for baking this week. Love the holiday season!
